Food trucks have been growing in popularity as a way to bring restaurant quality food to a wide range of diverse locations.
It wasn’t until I was a student in Boston that I truly saw the success and innovation of food truck entrepreneurs. Food trucks park around campus as well as throughout the financial district and frequent farmers’ markets and special city events. The trucks vary in products from ice cream sandwiches, crepes, and cupcakes, to grilled cheeses, soba noodle salads, and rosemary french fries. There is nothing more exciting then walking down the street and seeing your favorite food truck parked on the next block.
